Sausage Seasoning Pack: Deer Hunter (Venison) Sausage 253g x 6 Packs

- DEER HUNTER SAUSAGE SEASONING: This one is for the hunter gatherers out there who like a flavour kick. Packed with garlic, paprika, sage, mustard seeds, all spice & coriander, this seasoning goes perfectly with wild or farmed venison. Note - our Deer Hunter is full of flavour but has been kid tested and approved and is not spicy.

- YIELD: This 253g Sausage Seasoning pack will make appx 5kg of sausages or approximately 60 sausages. 

- 'THE BUTCHERS ACCOMPLICE' is a collaboration between AWARD WINNING sausage maker, master butcher and passionate foodie, Paul Greaney from The Chop Shop and The New Zealand Casings Co. Our goal is to make sausage making simple and enjoyable and delicious.

- AWARD WINNING RECIPES: Paul's snags are so good that in 2013 he took out the supreme award at the New Zealand Sausage Competition for his Village Pork Sausage.  Our Sausage Seasoning recipes come from Paul's secret stash of sausage recipes. 

- SAUSAGES MADE SIMPLE: We wanted to make sausage making really simple. Our sausage seasoning packs include all of the herbs, spices, ingredients and full instructions you need to make delicious sausages. All you need to add is the meat, fat, casings and water.  

- FULL OF FLAVOUR, NOT FILLERS: The best sausages are full of meat, fat and flavour. Nothing else. 'Fillers' are only added to sausages to make meat go further so sausage manufacturers can make more profit. That's why our our Sausage Seasoning Packs are full of flavour, not fillers. Sausages the way they should be.

- NO MYSTERY MEAT: We don't put any nasty stuff in our sausage seasoning packs. They are free from ingredients containing MSG, nitrates, preservatives, soy, e numbers, gluten and dairy. 

- SAUSAGE CASINGS: Fill your sausages into a natural hog casing for a fat, chunky sausage or a natural sheep casing for a slimmer sausage eg chipolata or breakfast sausage.

- USAGE INSTRUCTIONS: You will receive an email from us 3 days after you place your order. This email has a link to usage instructions for these products. There is also a QR code on the back of pack which will take you to the same usage instructions. They are downloadable and printable or follow this link.

- STORAGE: Store in a cool, dry place. This product has a 12 month shelf like from the date of manufacture. You can store it up to its best before date, even if it has been opened. 

- SHIPPING: We offer FREE STANDARD SHIPPING on wholesale orders over $300. Orders under $300 are subject to a flat fee of $10.00 excluding GST. Standard shipping 1-3 business days for North Island. 2-5 business days for South Island. Rural Deliveries may take another 1-2 days to arrive. Orders placed before 12noon will be dispatched the same day. We do not dispatch orders over the weekend.

- PAYMENT METHOD & TERMS: You will be emailed an Invoice for all orders placed on our wholesale shop. Standard payment terms are 20th month following date of invoice (dispatch date) or as agreed.  Please note there is no final 'checkout' page. When you click the 'Submit' button on the Cart Summary page your order will be placed.

Types of Sausages


History and tradition usually guides which sausage casings are used for each type of  sausage, and therefore the size of the sausage. However, there really is no technical  reason that sausages have to be certain sizes, and therefore use certain casings.

Our advice is, don’t get too caught up on the size of your sausage. Our natural sheep casings make slim, tender & juicy sausages and are traditionally used for chipolatas, breakfast sausages, frankfurters, hot dogs, cabanossi, chorizo, merguez, pork,  venison, lamb, beef, chicken or halal sausages .

Usage & Storage Instructions:

- USAGE INSTRUCTIONS:

PLEASE DO NOT REMOVE CASINGS FROM TUBES.
1) Rinse casings thoroughly on tubes under cold tap.
2) Soak casings on tubes in warm water (99F - body temp) for minimum of 45mins or in cold water overnight.
3) Transfer from tube to sausage stuffing horn. Please use a 13mm/0.5" nozzle on your sausage stuffer.


- STORAGE INSTRUCTIONS: Please store in refrigerator. Once opened generously resalt any left over casings. Wrap in clingfilm and store airtight in our resealable pouch provided or in a container up to the best before date.


- SHELF LIFE: Our product has a 12 month shelf life from date of manufacturer. It will last it's full shelf life, even if product is opened as long as storage instructions are followed.
